Instructions

1. Cut the boneless, skinless chicken breasts into 1-inch cubes.
2. Peel and chop the onion.
3. Peel and mince the garlic cloves.
4. Peel and grate the ginger root.
5. In a small bowl, combine the curry powder, garam masala, chili powder, salt, and black pepper.
6. In a large skillet, melt the butter over medium heat.
7. Add the chopped onion and sauté for 3-5 minutes until translucent.
8. Add the minced garlic and grated ginger, and sauté for an additional minute.
9. Add the spice mixture from step 5 and stir to coat the onion and garlic.
10. Add the cubed chicken and stir to coat with the spice mixture.
11. Transfer the chicken and onion mixture to a slow cooker.
12. Pour the coconut milk and tomato paste over the chicken mixture and stir to combine.
13. Drizzle the maple syrup or honey over the top.
14. Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
15. In a small bowl, whisk together the cornstarch and cold water to create a slurry.
16. Carefully remove the lid of the slow cooker and stir in the cornstarch slurry.
