Instructions

1. Wash and peel the Yukon gold potatoes. Cut them into 1-inch cubes.
2. Heat the avocado oil in a large skillet over medium-high heat.
3. Add the pork chops to the skillet and brown them on both sides, about 2-3 minutes per side. Remove the pork chops from the skillet and set them aside.
4. Slice the yellow onion.
