Ingredients
3 tbsp(s) Oil (Grapeseed, Avacado, Coconut, or any other neutral oil)
1 White or Yellow Onion, finely diced
1 tbsp(s) Ground Cumin
3/4 tsp(s) Sea Salt
6 Garlic Cloves, minced (3 tbs)
2 tbsp(s) Ginger, minced
1/2 cup(s) Cilantro, chopped
2 Fresh Green Chilies, sliced with seeds
1 tbsp(s) Ground Coriander
1 tsp(s) Chili Powder
1 tsp(s) Ground Turmeric
28 oz(s) Can Pureed, Crushed, or Finely Diced Tomatoes
15 oz(s) 2 Cans Chickpeas, slightly drained
1 tsp(s) Garam Masala
2 tsp(s) Coconut Sugar
2 tbsp(s) Lemon Juice
Instructions
1. Heat 3 tbsp(s) of oil (Grapeseed, Avacado, Coconut, or any other neutral oil) in a large skillet or Dutch oven over medium heat.
2. Add 1 White or Yellow Onion, finely diced, and sauté for 4-5 minutes, until softened and translucent.
3. Add 1 tbsp(s) of Ground Cumin and 3/4 tsp(s) of Sea Salt, and sauté for another minute, stirring constantly.
4. Add 6 Garlic Cloves, minced (3 tbs), and 2 tbsp(s) of Ginger, minced, and sauté for another minute, until fragrant.
5. Add 1/2 cup(s) of Cilantro, chopped, 2 Fresh Green Chilies, sliced with seeds, 1 tbsp(s) of Ground Coriander, 1 tsp(s) of Chili Powder, and 1 tsp(s) of Ground Turmeric, and sauté for another minute, stirring constantly.
6. Add 28 oz(s) of Can Pureed, Crushed, or Finely Diced Tomatoes, and stir to combine.
7. Add 15 oz(s) of 2 Cans Chickpeas, slightly drained, and stir to combine.
8. Add 1 tsp(s) of Garam Masala, 2 tsp(s) of Coconut Sugar, and 2 tbsp(s) of Lemon Juice, and stir to combine.
9. Reduce heat to low and simmer for 20-25 minutes, stirring occasionally, until the flavors have melded together and the chickpeas are coated in the sauce.
10. Taste and adjust seasoning as needed.
11. Serve hot over rice or with naan or roti. Enjoy!
