Ingredients
4 Zucchini, ends trimmed
2 cup(s) Packed Fresh Basil Leaves
2 Garlic Cloves
1/3 cup(s) Extra-Virgin Olive Oil
2 tsp(s) Fresh Lemon Juice
1/4 cup(s) Freshly Grated Parmesan Cheese
Kosher Salt to taste
Black Pepper to taste
Cherry or Grape Tomatoes Optional
Instructions
1. Wash the zucchini and trim the ends.
2. Using a spiralizer or a julienne peeler, cut the zucchini into noodles.
3. Place the zucchini noodles in a colander and sprinkle with kosher salt. Let sit for 10-15 minutes to draw out excess moisture.
4. Rinse the basil leaves and pat them dry with a paper towel.
5. In a food processor, combine the basil leaves, garlic cloves, and 1/4 cup of the olive oil. Process until smooth.
6. With the processor running, slowly pour in the remaining 1/4 cup of olive oil through the top. Process until the pesto reaches the desired consistency.
