2 lb(s) Stewing Beef, trimmed/cubed
3 tbsp(s) Flour
1/2 tsp(s) Garlic Powder
1/2 tsp(s) Salt
1/2 tsp(s) Black Pepper
3 tbsp(s) Olive Oil
1 Onion, chopped
6 cup(s) Beef Broth
1/2 cup(s) Red Wine (optional)
1 lb(s) Potatoes, peeled/cubed
4 Carrots, cut into 1 inch cubes
4 Celery Stalks, cut into 1 inch pieces
3 tbsp(s) Tomato Paste
1 tsp(s) Dried Rosemary
2 tbsp(s) Cornstarch
2 tbsp(s) Water
3/4 cup(s) Peas
Instructions
1. Preheat oven to 325 degrees F (165 degrees C).
2. Season the stewing beef with salt, black pepper, and garlic powder. Dredge the beef in flour, shaking off any excess.
3. Heat the olive oil in a large Dutch oven over medium-high heat. Add the beef and cook until browned on all sides, about 5 minutes. Remove the beef from the pot and set aside.
4. Add the onion to the pot and cook until softened, about 5 minutes.
5. Add the beef broth, red wine (if using), potatoes, carrots, celery, tomato paste, and rosemary to the pot. Stir to combine.
6. Return the beef to the pot and bring the stew to a boil.
7. Cover the pot and transfer it to the preheated oven.
8. Stew the beef for 2 1/2 hours, or until tender.
9. Remove the pot from the oven and stir in the cornstarch and water until the sauce thickens.
10. Add the peas to the pot and cook for an additional 10 minutes.
