Ingredients
Mixed greens (arugula, spinach, kale)
2 oranges (peeled and segmented)
1 avocado (sliced)
1/2 red onion (thinly sliced)
1/4 cup(s) toasted almonds
1/4 cup(s) feta cheese (crumbled)
1/4 cup(s) olive oil
2 tbsp(s) orange juice
1 tbsp(s) honey
salt and pepper to taste
Instructions
1. In a large bowl, combine mixed greens (arugula, spinach, kale).
2. Peel and segment 2 oranges and add them to the bowl.
3. Slice 1 avocado and add it to the bowl.
4. Thinly slice 1/2 red onion and add it to the bowl.
5. Toast 1/4 cup of almonds and add them to the bowl.
6. Crumble 1/4 cup of feta cheese and add it to the bowl.
7. In a small bowl, whisk together 1/4 cup of olive oil, 2 tbsp of orange juice, and 1 tbsp of honey.
