4 cup(s) Strawberries, hulled & cut in half
1/2 Lemon, juiced
1/2 cup(s) Sugar
2 tbsp(s) Cornstarch
2 tbsp(s) Cold Water
1/8 tsp(s) Salt
Instructions
1. Rinse the strawberries, remove the hulls, and cut them in half.
2. In a large bowl, mix together the strawberries, lemon juice, sugar, cornstarch, and salt.
3. Let the mixture sit for about 15 minutes, until the strawberries start to release their juice and the mixture becomes syrupy.
4. Pour the mixture into a medium-sized pot and place it over medium heat.
5. Bring the mixture to a boil, stirring constantly.
6. Reduce the heat to low and let the mixture simmer for about 10-15 minutes, or until the preserves have thickened and passed the "wrinkle test".
7. Remove the pot from the heat and let the preserves cool for a few minutes.
8. Use an immersion blender or a regular blender to puree the preserves to your desired consistency.
9. Return the pot to the stovetop and bring the preserves to a boil over high heat.
10. Boil the preserves for 1-2 minutes, or until they have thickened and passed the "wrinkle test" again.
11. Remove the pot from the heat and let the preserves cool completely before transferring them to an airtight container and storing them in the fridge for up to 6 months.
