6 oz(s) Carrot
1 Yellow Onion
4 tbsp(s) Sour Cream
2 tsp(s) Garlic Powder
2 tsp(s) Dried Thyme
20 oz(s) Ground Beef
3 oz(s) Tomato Paste
2 tbsp(s) Flour
4 Beef Stock Concentrates
1 cup(s) White Cheddar Cheese
Instructions
1. Preheat the oven to 375°F.
2. Peel and chop the Yukon Gold Potatoes into 1-inch cubes. Place them in a large pot and cover them with cold water. Bring to a boil over high heat, then reduce the heat to medium-low and simmer for 15 to 20 minutes, or until the potatoes are tender when pierced with a fork.
3. While the potatoes are cooking, peel and chop the carrot and onion into small pieces. In a large skillet, heat 2 tablespoons of oil over medium heat. Add the carrot and onion and cook, stirring occasionally, for 5 to 7 minutes, or until they are tender.
4. Add the garlic powder, thyme, salt, and pepper to the skillet and stir to combine. Cook for 1 minute.
5. Add the ground beef to the skillet, breaking it up with a spoon as it cooks. Cook until the beef is no longer pink, about 5 to 7 minutes.
