Ingredients
1 lb(s) Chicken breast
1 Onion
1 Jalapeño
2 can(s) Cream of mushroom soup
1 can(s) Cream of jalapeño
1 can(s) Rotel diced tomatoes and chilies
12 Tostadas
1/2 Bag of Doritos crushed
16 oz(s) Cheddar cheese
Salt and pepper to taste
Instructions
1. Preheat oven to 350°F.
2. In a large skillet, sauté diced onion and jalapeño in a little bit of oil until the onion is translucent.
3. Add 1 lb boneless, skinless chicken breast, cut into bite-sized pieces, to the skillet and cook until browned on all sides and cooked through. Season with salt and pepper to taste.
4. In a separate pot, heat the cream of mushroom soup, cream of jalapeño, and Rotel diced tomatoes and chilies over medium heat, stirring occasionally, until warm.
5. In a 9x13 inch baking dish, spread a layer of tostadas.
6. Add half of the chicken mixture on top of the tostadas.
7. Pour the warm soup mixture over the chicken. Then add another layer of tostadas.
8. Top with the remaining chicken and sprinkle shredded cheddar cheese over the top.
9. Cover with foil and bake for 20-25 minutes.
10. Remove foil and top with Doritos, breaking them up into bite-sized pieces.
11. Return to oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
12. Remove from oven and let it cool for a few minutes before serving.
13. Serve hot and enjoy!
