4 Yukon Gold potatoes
2 turnips
4 carrots
1 cup(s) yellow onion
1/2 tsp(s) salt
1/2 tsp(s) black pepper
3 lb(s) pork tenderloin
2 tbsp(s) canola oil
1/3 cup(s) pure maple syrup
1/8 tsp(s) cayenne pepper
1/8 tsp(s) ground cumin
1 ground cloves to taste
Instructions
1. Preheat your oven to 400°F (200°C).
2. Peel and cut the Yukon Gold potatoes, turnips, and carrots into 1-inch cubes.
3. Slice the yellow onion.
4. In a large bowl, combine the cubed potatoes, turnips, carrots, and sliced onion. Season with 1/2 teaspoon of salt and 1/2 teaspoon of black pepper. Mix well to coat the vegetables.
5. Place the seasoned vegetables in a large roasting pan.
