1 tbsp(s) Olive Oil
Filling
1/3 cup(s) Milk
4 tbsp(s) Melted Butter
1/2 cup(s) Sour Cream
1/2 tsp(s) Garlic Powder
1/4 cup(s) Chopped Green Onions
1 tsp(s) Chives
1/2 tsp(s) Salt
1 1/2 cup(s) Grated Cheddar Cheese
4 oz(s) Cooked Bacon, chopped
Instructions
1. Preheat your oven to 400°F (200°C).
2. Wash the 4 potatoes and pierce them several times with a fork.
3. Rub the potatoes with 1 tbsp of olive oil and sprinkle with 1/2 tsp of salt and 1/2 tsp of black pepper.
4. Bake the potatoes for 50-60 minutes, or until they are tender when pierced with a fork.
5. Remove the potatoes from the oven and let them cool for about 10 minutes.
6. Cut the potatoes in half lengthwise and scoop out the flesh into a large bowl, leaving a thin layer of potato attached to the skins.
7. In the bowl with the potato flesh, add 1/3 cup of milk, 4 tbsp of melted butter, 1/2 cup of sour cream, 1/2 tsp of garlic powder, 1/4 cup of chopped green onions, 1 tsp of chives, and 1/2 tsp of salt.
8. Mash the ingredients together until they are well combined and smooth.
9. Stir in 1 1/2 cups of grated cheddar cheese and 4 oz of chopped cooked bacon.
10. Spoon the filling back into the potato skins, dividing it evenly among the 8 halves.
11. Bake the stuffed potato skins for an additional 15-20 minutes, or until the cheese is melted and the tops are lightly browned.
