Ingredients
4 Thick-cut Bacon Slices, chopped
6 Scallions
2 lb(s) Sweet Potato, peeled/cut into 3/4 inch pieces
1 Red Bell Pepper, roughly chopped
1 1/2 tsp(s) Kosher Salt
1 1/2 tsp(s) Paprika
1 tsp(s) Cumin
1/4 tsp(s) Garlic Powder
Instructions
1. Cut 4 Thick-cut Bacon Slices into small pieces and set aside.
2. Chop 6 Scallions and set aside.
3. Peel and cut 2 lb(s) Sweet Potato into 3/4 inch pieces.
4. Roughly chop 1 Red Bell Pepper.
5. In a large bowl, mix together 1 1/2 tsp(s) Kosher Salt, 1 1/2 tsp(s) Paprika, 1 tsp(s) Cumin, and 1/4 tsp(s) Garlic Powder.
6. Add the sweet potato pieces to the bowl and toss to coat evenly with the spice mixture.
7. In a large skillet, cook the bacon over medium-high heat until crispy. Remove from heat and set aside.
8. Add the sweet potato pieces to the skillet and cook for about 10-12 minutes, or until they are tender and golden brown, stirring occasionally.
