1 Ginger Thumb
2 Scallions
1 1/2 cup(s) Jasmine Rice
20 oz(s) Ground Beef
1/2 cup(s) Panko Breadcrumbs
8 oz(s) Bulgogi Sauce
3 tbsp(s) Sour Cream
1 tsp(s) Sriracha
1 tbsp(s) Sesame Seeds
Instructions
1. Preheat oven to 425°F.
2. Rinse carrots and pat dry with a paper towel.
3. Cut carrots into bite-sized pieces.
4. Place carrot pieces on a baking sheet.
5. Drizzle carrots with 1 tablespoon of sesame oil.
6. Sprinkle carrots with a pinch of salt.
7. Toss carrots to coat with oil and salt.
8. Roast carrots in the oven for 20-25 minutes, or until tender and lightly browned.
9. While carrots are roasting, peel ginger thumb and slice into thin rounds.
10. Cut scallions into 1-inch pieces.
11. Cook Jasmine rice according to package instructions.
12. In a large mixing bowl, combine ground beef, panko breadcrumbs, and a pinch of salt.
13. Mix well with your hands until just combined.
14. Use a small ice cream scoop to form meatballs, about 1 1/2 inches in diameter.
