9 oz(s) cheese tortellini
2 tbsp(s) olive oil
1/2 lb(s) Italian sausage
1/2 cup(s) onions
24 oz(s) tomato sauce
1/4 cup(s) fresh parsley
salt to taste
ground black pepper to taste
1 cup(s) mozzarella cheese
2 tbsp(s) Parmesan cheese
Instructions
1. Preheat your oven to 375°F (190°C).
2. Bring a large pot of salted water to a boil. Cook the cheese tortellini according to the package instructions until al dente. Drain and set aside.
3. In a large skillet, heat the olive oil over medium-high heat. Add the Italian sausage and cook, breaking it up with a spatula, until browned and cooked through, about 5-7 minutes.
4. Add the onions to the skillet and cook until softened, about 3-5 minutes.
5. Stir in the tomato sauce, fresh parsley, salt, and ground black pepper. Simmer for 5 minutes.
6. In a large baking dish, layer half of the cooked tortellini. Top with half of the sausage mixture and half of the mozzarella cheese.
