Ingredients

1 baguette
4 Roma tomatoes
1/2 seedless English cucumber
1 1/2 cup(s) freshly crumbled feta
1/2 cup(s) chopped green onion
1 lemon
1/4 cup(s) extra virgin olive oil
1 tsp(s) red wine vinegar
1/2 tsp(s) garlic powder
1/2 tsp(s) salt
1/4 tsp(s) black pepper
1/4 tsp(s) dried oregano leaves
1/8 tsp(s) dried dill
1/2 tsp(s) dried basil

Instructions

1. Preheat your oven to 400°F (200°C).
2. Slice the baguette into 1/2-inch thick slices.
3. Arrange the baguette slices on a baking sheet and lightly brush them with 2 tablespoons of the extra virgin olive oil.
4. Bake the baguette slices for 5-7 minutes, or until they are lightly toasted and golden brown.
5. Remove the baguette slices from the oven and set them aside to cool.
6. Dice the Roma tomatoes and place them in a medium-sized bowl.
7. Dice the seedless English cucumber and add it to the bowl with the tomatoes.
8. Add the freshly crumbled feta, chopped green onion, the remaining 2 tablespoons of extra virgin olive oil, red wine vinegar, garlic powder, salt, black pepper, dried oregano leaves, dried dill, and dried basil to the bowl.
9. Gently mix all the ingredients together until they are well combined.
10. Squeeze the juice of the lemon over the tomato and cucumber mixture and stir to incorporate.
11. Spoon the Greek bruschetta mixture onto the toasted baguette slices and serve immediately.
